Enoferm M2: The all-purpose yeast
Description: Enoferm M2: The all-purpose yeast Enoferm M2 was isolated in Stellenbosch, South Africa and is selected from the Massey University culture collection. It is a neutral to low ester-producing yeast and needs a high level of balanced nutrients for a strong fermentation finish. In reds and whites it can be distinguished by its expression of citrus and blossom notes, and is valued for accentuating volume in the mouth. How do winemakers rate this yeast for Chardonnay? Controversial, Montrachet, yeast requires care. As a traditionalist, I am was fan of Montrachet yeast for Chardonnay. Red Star Montrachet produced H2S in the presence of elemental sulfur on grapes, so large beverage companies all stopped using it in the 1980s. As a traditionalist, I sought a replacement, which is M1, and I see no reason to move to another "Montrachet" since M1 is not broken, but M2 is not proven in our consultancy. No to M2? Its a sound advice for consultants. | |
