.... was heard to say, '.... "O" barrels have a nutmeg volatiles" which I am not sure about in this Cabernet wine.

Using these barrels since 2011, very good results with Cabernet Sauvignon based wines from the cool 2009 and 2010 vintages. Attributes: rich, classy, Light toast, vanilla works with wines with some savory elements.
We used Tonnellerie O to make Bordeaux blends in Sonoma with great success. We think these barrels work with Remond and Saury here in Sonoma County.

We have several customers in the Napa Valley who are currently experimenting with these barrels, and we will votes up or down as we have a change to taste the wines and view the performance with the critics.
