K1 - V1116 (Killer Yeast)
Description: K1-V116 is a special yeast, which is alcohol tolerant and pocesses the "killer factor." It is recommended for restarting stuck fermentations and is equivalent to Enoferm L2226, Enoferm QA23, Uvaferm 43. IS THIS A YEAST FOR FINE WINEMAKIING?

This yeast appeared in the Napa Valley in vintage 2007. It was used for vinification. My sense is not to use these types of yeast for normal fermentations. I am especially wary of yeast with "killer factor", and worry that it could become part of a winery ecosystem. The question is does it kill the yeast from the terroir? Maybe.
