This barrel is popping up everywhere in 2011, both among white and red winemakers in the Enologix customer base albeit for wines that sell in the $32 to $48 range.

This is a fantastic barrel, here is why; most American oak barrels impart a bit of a flat sided aroma attribute. This barrel is different in this respect; that the aroma is a mix of vanilla, toast, and sappy characteristics. It does not give my wines a coconut attribute which I find objectionable in Chardonnay, Pinot Noir, ...

I am using the Nadalie and Demptos American oaks. The difference is that the Demptos are made from Missouri forests and the Nadalie from Virginia forests.
