Tannin Addition Formula
Description: One winemaker, famous for his Pinot Noir winemaking has developed an emphirical formula for determining how much vendors' Tannin to add, in the case of condensed tannins (not hyrolyzable). The formula is Vendor Tannin=700-(Enologix Tannin)

The formula makes some sense. The critics' prototypical California Pinot Noin's Tannin concentration ranges between 550 and 850 ppm EE Tannin (Enologix Equivilents). That's roughly in line with Premier Cru red Burgundy the benchmark by which we all can judge a California Pinot Noir.
