This is a hot topic, it temperature the most important thing in red winemaking? In my opinion Cap temperature is the most important single variable for Bordeaux varieties. But this is NOT true for other red varieties. One example is Zinfandel. Our databases show that time of fermentation is more important than temperature. How can this be true. Bordeaux varieties and Zinfandel have different colors and flavors. I am curious about other winemakers experiences.
