It has been two years since former Flora Springs enologist added his comments to this forum, yet since that time there has been nothing short of a massive increase in interest and use of tannin adjuncts in California winemaking. In essence what we now know is that winemakers are not willing to talk in a public forum about the widespread use of tannins to wines. We want to verify that winemakers are using tannin adjuncts in winemaking in California. The problem is that winemakers may be afraid to say this on the record, largely because of the media's negative coverage. Interesting.
