This is a star performer for winemakers in the Napa Valley which are cutting cost of goods produced (COGS). Use to make wines from Oakville, Rutherford, less useful for Stag's Leap, Diamond Mtn., Howell Mtn.

This barrel is a strong performer with Sonoma Cabernet Sauvignon blended wines priced between $20 and $30. It is a barrel recommended by Enologix for this use.

This is the American oak they cannot tell from French. We only buy their Grand Cru, thick stave, cooper select three year old with toasted heads. The two year oak is very average, and did not distinguish itself from other.

No opinion to express, but please, tell me someone didn't say: "I like these barrels, but they do not provide enough aromatic punch to overcome the terroir..." Is that a negative in their view, that they don't "overcome" terroir? (I hope I didn't overstep the purpose of this forum. Canton's OK by me.)

I like these barrels, but they do not provide enough aromatic punch to overcome the terroir in Sonoma with the most intense wines, but these are great barrels for Sonoma Merlot, mid-body Cabernets, i.e. non-vegetal Bordeaux varietals. Good for any Napa Bordeaux varietal wine.

I am reviewing this for a group of winemakers who were here at Enologix today. In essence the winemakers found that with Sonoma County wines these barrels do not add charred toasty aromas if you use the "Grand Cru", i.e. 3-year old version. It imparts no wiskey lactones. It does impart more of a "bees wax" character, and a sweetness, said one winemaker. By the way they were the equal of French oak barrels in terms of taste, but not in terms of aromatics.

I want to add that Canton now has what I consider the equivelent to the Nadalie SHT barrel in American oak, this is their Grand Cru barrel, coopered from wood aged 36 months. Order their special heavy toast. I think this barrel works with Napa Valley Cabernet Sauvignon as well as Cabernet Sauvignons made from cooler regions.

We are not using these for Central Coast, Santa Barbara AVA, Chardonnay or Pinot Noirs, i.e. Burgundy varietals.

I ran into these barrels working with Ridge Vineyards Zinfandels. Although they have stopped using the barrels for most of their Zinfandels, I was impressed. Since that time I have tasted Cabernet wines made with these barrels, and I am very impressed with what they do for consumer Cabernet Sauvignons. Try my client 's, Neibaum-Coppolla, regular Napa Valley Cabernet Sauvignon.

We use these barrels in the Coppola Cask. It adds sweetness, brown sugar creme brulee. It does not have the dill defect.

I used these before Taransaud bought the company; we eliminated these from all of our programs. These added a gree-wood, plank, attribute. There is a dill character.
