Desire to make wines with lower percentage of new French oak? A positive report came from a customer using this barrel to make Cabernet Sauvignons with only 45% new French oak barrels. One of our winemakers tasted the wine and loved the results.

These are superior barrels for Sonoma County Bordeaux blends, nonetheless the Tonnellerie O is better than the Remond Center of France.

The COF barrels are repeatedly rejected by winemakers from Santa Clara, Santa Cruz to Napa Vally.

Remond barrels in general are excellent, but the COF barrels a just that much more rustic than the Bertanges that I do not use them for Cabernet Sauvignons which have high potential for sauvage or wild aroma attributes that turn herbal, i.e. Santa Cruz mountains. I do not trust the COF as much as a specific forest appellation.

We have found that there are aroma differences between forests for this cooperage. The Center of France barrels do not score as high as the Bertranges barrels in blind tastings for cool climate and hillside Cabernet Sauvignons, such as Santa Cruz Mountains, Howell Mountain.
