Enzyme Color-Pro (Scott Labs)
Description: We prefer this to Color-X, having success with both Pinot Noir and Syrah in terms of color. We believe that we get more tannin according to Enologix data we have for Syrah. We DO NOT use this across the board for all wines. What do others think?

We have seen our customers use the Scottzyme Color Pro and -X. We usually do not take a position on vendors' products, largely because there are no data. Most of the time a brand name is no guarantee that the formulation or specification behind a product is the same from one year to the next. In the case of Color-Pro, we are seeing customers use this product to good affect in the cooler vintages, since 2003, with early ripening red varieties of grapes, including Pinot Noir and Merlot.

We like this better than color pro it seems to be more controllable. So far seems better than tannin or chip additions in creating stable complex anthos but we are planning better experiments this year.
